almond butter and chocolate chip biscuits

These chocolate chip biscuits are for those moments when
you’re craving something sweet but don’t want it to be
completely unhealthy. By making a few substitutions you
can always create healthier versions of your favourite treats.

Eating well doesn’t mean missing out. Food is to be enjoyed.

INGREDIENTS

  • 1 3/4 cups wholemeal flour
  • 1/2 tsp bi-carb soda
  • 1/4 cup coconut oil
  • 1 Tbs tahni
  • 1 tsp vanilla extract
  • 1/2 cup almond butter
  • 1/2 cup rice malt syrup
  • 1 Tbs almond milk
  • 1/3 cup dark chocolate chips

METHOD

  • Line a tray with baking paper.
  • Pre heat oven to 160 degrees Celsius.
  • Mix dry ingredients in a mixing bowl.
  • Melt coconut oil.
  • Add the rest of the wet ingredients to the coconut oil and mix
    until it forms a smooth consistency.
  • Mix wet and dry ingredients together.
  • Roll mixture into balls and place on baking tray.
  • Using the back of a fork gently flatten the balls into a biscuit shape.
  • Bake for 15mins at 160 degrees Celsius.
  • Allow to cool on baking tray for 10-15mins before placing on a
    cool rack.
