semi sweet dark chocolate sweet potato brownies
Saturday 19th SeptemberI’m a lover of dark chocolate and these semi sweet
dark chocolate sweet potato brownies are the perfect
combination of bitterness and sweetness with some
slightly healthier switches than traditional brownies
so you won’t have the awful sugar crash after eating
them. I like to slice them up and take them to work
with me for an afternoon sweet treat rather that
reaching for the chocolate and lollies that always
seem to be on hand in a oncology department thanks
to our beautiful patients.

ChristyINGREDIENTS
- 500g sweet potato
- 2 eggs
- 1/4 cup olive oil
- 1/2 cup milk
- 1 Tbs vanilla extract
- 3/4 cup maple syrup
- 3/4 cup almond meal
- 1 cup wholemeal flour
- 1/2 cup raw cacao
- 1 tsp baking powder
- 1/4 tsp salt
- 50g dark chocolate (optional)
- 1/2 cup walnuts (optional)
METHOD
- Boil or steam sweet potato until soft.
- Once sweet potato is cool puree in blender.
- Place sweet potato in mixing bowl and add eggs, olive oil, milk,
maple syrup and vanilla extract mixing together until well combined. - Add almond meal, flour, raw cacao, baking powder and salt. Mix to
form smooth batter. - Add dark chocolate and walnuts. Mix until combined.
- Line (20 x 30)cm tray with baking paper.
- Spread batter evenly in tray.
- Cook at 160 degrees Celsius for 30mins.
- Cool in tray for 10mins then lift out of tray using baking paper and
place on cool rack to completely cool. - Slice up and enjoy warm with vanilla yoghurt or ice cream if
you’re feeling decadent.
