winter spiced granola

Nothing says winter spices like aromatic scent of cinnamon, ginger and
nutmeg wafting through your house. I love granola as a snack with
yoghurt, on top of a smoothie bowl or even on it’s own straight out of
the jar I store it in. I make a big batch on weekends so I have an easy
go to snack when I’m time crunched during the week.

I prefer to make my own granola as so many of the ones available at the
supermarket are overly sweetened with sugar and I can play around with
the spices, nuts and seeds I add to mix up the flavours of each batch.

There are no rules when it comes to making your own granola, you can
literally use whatever grains, nuts, seed and spices you have on hand
to make your own signature creation.

INGREDIENTS

  • 2 cups rolled oats
  • 1/3 cup chopped pecans
  • 1/3 cup chopped macadamias
  • 1/2 cup coconut flakes
  • 1/4 cup Buckinis
  • 2 dates finely chopped
  • 2 Tbs pumpkin seeds
  • 2 Tbs dried cranberries
  • 2 Tbs honey
  • 1 Tbs melted coconut oil
  • 1/2 – 1 tsp ground cinnamon
  • 1/4 – 1/2 tsp ground nutmeg
  • 1/4 – 1/2 tsp ground ginger

METHOD

  • Preheat oven to 160 degrees Celsius.
  • Mixed all the ingredients together in a large bowl.
  • Spread ingredients evenly oven a baking tray lined with baking paper.
  • Cook for 10-15mins, opening the door to stir the ingredients occasionally
    to ensure it cooks evenly and the nuts don’t burn.
  • Allow to cook on the tray.
  • Break up and enjoy with yogurt or on top of your favourite smoothie bowl.
